Defeat Type 2 Diabetes with These Four Simple Recipes for Superfoods.

While there's no single food that can "defeat" type 2 diabetes, incorporating nutrient-rich superfoods into your diet can help manage blood sugar levels and promote overall health. Here are four simple recipes featuring superfoods that can support a diabetes-friendly diet: 

Ingredients: – 1 cup quinoa, rinsed – 2 cups water or low-sodium vegetable broth – 1 tablespoon olive oil – 2 cloves garlic, minced

– 2 cups mixed vegetables (such as bell peppers, broccoli, carrots, and snap peas) – 1 tablespoon low-sodium soy sauce or tamari – 1 teaspoon sesame oil – Salt and pepper to taste – Optional: sliced tofu or cooked chicken for added protein

The quinoa and broth or water should be mixed in a medium-sized saucepan. For the quinoa to cook and the water to be absorbed, bring to a boil, then lower heat to low, cover, and simmer for 15-20 minutes. 

Warm the olive oil in a big wok or skillet over medium heat. Saute the garlic and onion for another two or three minutes, or until they are tender. 

Toss in a variety of veggies and stir-fry for five to seven minutes, or until they are crisp-tender.  

Just before serving, combine cooked quinoa with sesame oil, soy sauce, or tamari. Continue cooking for another two to three minutes, stirring often. 

Add salt and pepper according to your preference. Top with sliced tofu or cooked chicken for extra protein, if desired, and serve hot.
